1 boneless skinless chicken breast
3-4 celery stalks
1/2 cup mayonnaise
salt (regular or sea salt)
In a pot, add chicken and water and boil for about 20 minutes. Drain water. Let chicken cool.
Cut celery sticks into small pieces (about 2-3 in. per piece)
Cut chicken into smaller pieces then place in blender. Blend lightly until it is in fine pieces that resemble breadcrumbs.
In a mixing bowl, add blended chicken, celery pieces, mayonnaise, black pepper, salt and mix. If you choose to use cranberries, add to the mix.
Serves well with cous cous, tomato, steamed rice, quinoa or wild rice.
*Use Tuna in place of blended chicken to create a wonderful Tuna salad.
